Made by the highly-respected Simonnet-Febvre house, this is the only Crémant made in Chablis. Made from a 60-40% blend of Chardonnay and Pinot Noir, it is brilliantly crisp and fresh with citrus notes and a vitality of structure that is racy and rewarding. Fermented in the traditional method it is aged for between 2 and 3 years on lees before disgorgement.
This therefore provides greater freshness and higher natural acidity, both of which are so important to traditional method sparkling wines. What's not really spoken about is that when the firm was established (two families marrying - the normal Burgundian way of things) they immediately specialised in the production of sparkling Chablis, the forerunner of today's Crémant, so our high regard for this particular wine shouldn't come as a surprise - they've been making it for over 180 years!
